I'm thinking of going with a Caribbean theme cause I've been having a lot of mashed potatoes lately.
Arroz con gandules. It's a tomato-based rice dish with pigeon peas (kind of like a subtler version of black eyed peas). I made this the other night. Super easy and super satisfying.
Some kind of Caribbean or coconutty Asian-style fish. Maybe this? Or this? Or maybe a hybrid of the two. Basically, I want the sweetness of the coconut plus some chili and maybe ginger and garlic.
Fried plantains and/or fried bananas. Does anyone know where to get plantains in Portland? There's a Caribbean grocery up on 42nd, but they don't carry a ton of produce. Or maybe a Mexican grocery would have them? Depending on the part of Mexico the owner's from?
Corn tortillas/corn cakes. Just cause.
Avocado salad with tomatoes and onions marinated in lime juice. I think it will go well with the fish and rice.
If I can find a store nearby that sells a good pastel tres leches, I think that'd be nice to serve for dessert. If not, maybe key lime pie.
